Pump Up the Jam!
Team Nein, led by Outpost brewer Matt, pumped up the jam on their brew day! We’re talking nine pounds of raspberry jam in the kettle and another 84 pounds of tart fruity goodness in the fermenter. “Nein Witz” Raspberry Milk Stout is the latest creation to flow from the DB Family Beer Project.
Josh, Brittany, Jean, Sadie, Thomas and Raphael, along with Matt landed on a beer style in a roundabout manner. The group proposed two main concepts to start, one being a tropical fruit flavored ale and the other being a roasted malt bomb. In discussions, the team decided to incorporate elements of both – mixing the fruit notes from the ale idea with the malt driven lager suggestion.
The challenge for Matt when designing the beer was figuring out a balance for all the flavors. He thinks they got it! In a careful effort to not let any one note outplay the other, the team went with a solid malt bill and pinch of hops to accompany the jam and puree additions plus milk. Matt and his DB family brew team expect a big mouth feel with a dry finish and harmony between the tart raspberries and sweet milk.
