Devils Backbone Mac & Cheese
Serves 8 as a side dish or 4 as the main course
3 Tbsp. butter
12 oz. extra sharp cheddar cheese, coarsely grated
12 oz. American cheese or cheddar cheese, coarsely grated
1 lb. elbow pasta, cooked al dente
1 2/3 cup whole milk
Salt & pepper
Preheat oven to 375 degrees and grease baking dish with 1 tablespoon butter.
Mix grated cheeses and set aside two cups for topping.
In a large bowl toss together the pasta, cheeses, and salt & pepper to taste. Add the pasta and cheese mixture into the prepared baking dish and evenly pour milk on top.
Sprinkle reserved cheese and butter over milk, then bake uncovered for 45 minutes. Raise heat to 400 degrees and bake an additional 15 to 20 minutes until crusty on top and bottom.
Enjoy immediately with Vienna Lager!
